Food trucks are a gift to humanity. Plain and simple. They’re literally filled with cheap, delicious food that’s ready and waiting for you around the corner.

But, what do you do when they’re not around your corner? They’ve parked and set up shop around some other corner on the other side of town. Bummer.

Good news! As you probably know, a lot of great restaurants in metro Detroit started as small scale operations, like food trucks, before opening a full-fledged restaurant. In the spirit of hitting the ground running this new year, here are a few food trucks opening brick and mortar locations in metro Detroit.

Rollin Stone Wood Fired Pizza

What started as a desire to make quality pizza with fresh ingredients in a country with a pizza chain on almost every corner, the Rollin Stone Wood Fired Pizza food truck has been roaming metro Detroit for years. The family-owned wood-fired pizza truck will be opening a restaurant in Greek Oak Township and a location in a food court opening this spring in the Guardian Building in Detroit. Expect delicious margarita, pepperoni, Mediterranean pizzas and more.

This is how you Traverse Michigan. With cutting edge technology, tons of cargo space, and advanced safety features, Chevy Traverse is your key to unlocking the mitten state.

Shimmy Shack

Detroit’s vegan and gluten-free food truck will be opening a brick and mortar location sometime this year. An exact location is currently unknown, but you can expect menu items, like coney dogs topped with black bean chili, black bean burgers, french fries, sweet potato fries, shakes and more.

Nosh Pit

Continuing the vegan/vegetarian trend on this list is Nosh Pit, which plans to open a restaurant and food truck park in Hamtramck in early 2018. The restaurant menu will include items from the food truck and catering menu, such as a lentil sloppy joe topped with Better Made chips and served on a STAR Bakery roll or the three cheese baked ziti.

Wahlburgers

While this isn’t exactly a food truck opening a brick and mortar restaurant, like the others above, celebrity-backed Wahlburgers is planning to open restaurants and food trucks at select Meijer stores across Michigan and Ohio. Specific stores haven’t been chosen, but actor and co-owner Mark Wahlberg has toured Meijer stores in Taylor and Royal Oak.

What other metro Detroit food trucks would you like to see open brick and mortar restaurants this year?
