The seasonal veggie hash and veggie omelette are great well-rounded meals packed with protein and sauteed vegetables. If you’re in the mood for eggs benedict, try the smoked salmon benedict. If you’re really staying health conscious, consider nixing the cream cheese, as good as it is. While not everything on Rose’s Fine Food’s menu screams “health conscious!,” there are a couple choices for you if you’re trying to start your day off right. Of particular note is the Campfire Cowbeaux: scrambled eggs mixed with peppers, onions, garlic, cilantro, salsa served with a side of cornbread and beans. Open for brunch on Saturdays and Sundays, GreenSpace Cafe in Ferndale prides itself on its all-vegetarian menu with fresh ingredients used in every dish. Start your brunch off with a plate of fresh fruit or a bowl of chia pudding before moving on to a vegetarian breakfast burrito made with scrambled Michigan tofu, brown rice, pinto beans, potatoes, local greens, salsa and cashew sour cream. It’s a healthy breakfast burrito that will give you the energy to take on the rest of your day. With a large portion of the menu filled with different pancakes, French toast and waffles, The Hudson Cafe in Detroit might not be the best place to go for the weak-willed. But, if you do take the time to check it out, you’ll find healthy dishes on the menu that will leave you satisfied and feeling great. For example, there’s the “Healthy Scramble,” which consists of scrambled egg whites, baby spinach, tomatoes, onions and multi-grain toast. There’s even a veggie crepe stuffed with tomato, onion, green peppers, spinach, mushrooms, and swiss cheese.
