In the last 20 years, the concept of farm-to-table has gained popularity across restaurants. The backbone of this moment is focused on sourcing the freshest ingredients from farmers and purveyors within the closest proximity to where the food is being prepared. The result: deliciously fresh and unique dishes inspired by what’s available in season. Here in Metro Detroit, there are several farm-to-table restaurants making a name for themselves by delivering high-quality and unique plates to each customer. Chartreuse Kitchen & Cocktails

Chartreuse Kitchen & Cocktails sources many of its ingredients from local farmers and purveyors, including fresh produce, meats, and dairy. The restaurant’s menu changes frequently based on the availability of seasonal ingredients, which helps to support local agriculture. Chartreuse also has an on-site garden where they grow herbs, vegetables, and other ingredients for use in their dishes and cocktails. According to Chartreuse co-owner Sandy Levine, “Chartreuse is a bright, fresh, vibrant restaurant in the heart of the arts district of Midtown Detroit.  We love cultivating relationships with other Detroiters, whether it be our guests, local farmers, fisheries, butchers, beverage-makers, or people visiting the city from out of town.  We love our community and the people that make it what it is, and we love providing fresh, local food and delicious drinks made from quality ingredients to friends enjoying some well-deserved time away from the daily grind of the outside world.” As an added bonus, Chartreuse is committed to reducing food waste and uses creative techniques to utilize every part of the ingredients they source. They partner with local organizations like Keep Growing Detroit to support urban agriculture and promote sustainable food systems which are great for the environment and the community.

Freya

Freya’s menu is based entirely on seasonal ingredients sourced from local farms and purveyors. Each dish is designed to showcase the natural flavors and textures of the ingredients, with minimal processing or manipulation. They grow some of their own produce, including herbs, vegetables, and edible flowers, in their on-site garden to use in their dishes and cocktails. The restaurant works closely with its suppliers to ensure that they are using sustainable and ethical farming practices. Freya’s commitment to sustainable sourcing extends to its bar program, which features local spirits, beers, and wines.

Sylvan Table

Sylvan Table is a farm-to-table restaurant that sources many of its ingredients from its own sizable farm, which sprawls over more than three acres. The farm is incredible to look at, especially in the summer, and allows the guests to see where their food is coming from firsthand. Their menu changes frequently based on the availability of seasonal ingredients, with a focus on simple, rustic dishes that showcase the flavors of the ingredients. They are committed to using sustainable farming practices and use organic and biodynamic methods to grow their produce. They have also partnered with Make Food Not Waste to ensure no food is wasted by their restaurant. Sylvan Table also hosts farm dinners and other events that highlight the connection between food and the natural environment.

Coriander Kitchen & Farm

Coriander Kitchen & Farm is the only restaurant in the city of Detroit that has both the farm and the table. They are committed to supporting local Detroit and Michigan farmers and reducing food waste by using creative techniques to utilize every part of the ingredients they source.
